Last week, our Founder Marc and our new chef, Greg Jamiolkowski, headed to Austin, Texas to check out the ever-changing Lone Star barbecue scene and see where the next generation of ’cue is taking things.
First stop was Interstellar BBQ, recipient of a 2024 Michelin star, followed by Parrish BBQ, a newer northeast Austin trailer serving up excellent Creole-inspired barbecue.
From there, they visited Leroy & Lewis, started by a former Hill Country pitmaster and currently ranked #2 on the Texas Monthly Top 50 Barbecue list with a Michelin star of their own.
They wrapped up the day at the original Loro, Aaron Franklin and Tyson Cole’s fantastic Asian smokehouse mashup.
Along the way, they were joined by their new friend and barbecue guru, Matt Van Orden, who kept them in good company, especially while waiting in line in the August Texas heat.
Rare butcher cuts. Smoked vegetables. Unexpected spices. New smoking methods.
Austin gave them a front-row seat to the “new wave” of barbecue: chefs respecting the traditions of Central Texas while bending the rules, experimenting with flavor, and continuing to push barbecue forward.
Plenty of inspiration to bring back home to New York.

Over the last few days, Hill Country Barbecue Market came all the way to the Texas Hill Country to spend some time at the most iconic barbecue spots! ☀️
Founder, Marc Glosserman, grew up around this amazing barbecue and wants to continue to provide the best Texas style barbecue in New York City, which is why visiting and learning about the “Barbecue Capital of Texas” is so important to us! 🍖

You don’t run a barbecue restaurant for 19 years without leaving a few marks on the building.
Every wall, every piece of equipment and especially each of our smokers at 30 west 26th street has a story attached to it.
Tens of thousands of briskets. Countless racks of ribs. Holiday meals. Celebrations. Birthday dinners. First dates. Regulars who have been coming through the doors since the beginning in 2007.
So while we’re excited about what’s coming next, we’re also taking a moment to appreciate what got us here.
Thank you SO very much for supporting us in our journey to bring a taste of Central Texas to New York City.

After August 5th, Hill Country is taking a short pause beginning August 5th to upgrade our equipment and spruce up to make your visits here even better!
That means you’ve got a little time left to get your fill of authentic Texas barbecue in New York City: slow-smoked brisket, pork ribs, sausage, pulled pork, smoked meats and all your favorite Hill Country sides.
We’ll be back in September, rested, refreshed and fired up to serve you Texas barbecue smoked low and slow.

LAST CALL FOR ’CUE ’TIL SEPTEMBER.
Hill Country is taking a short pause starting August 5th while we install new equipment and make some important improvements behind the scenes.
Before we close for a few weeks, come join us in New York City for one more round of authentic Texas barbecue, smoked brisket, pork ribs, smoked chicken, sausage, wings, mac and cheese, cornbread, cold drinks, live music, and true Texas hospitality.
We’ve been proud to serve real Texas barbecue in the heart of NYC, using traditional smoking methods, Texas post oak, and the same commitment to great food and genuine hospitality that Hill Country was built on.
This is not goodbye.
We’ll be back in September, rested, refreshed, and fired up for the next chapter of Hill Country.
