Ever wonder what makes our St. Louis-style ribs so good?
Our ribs are smoked low and slow over pure hickory for 4 hours, then finished with our signature mop sauce.
It's a process that takes patience, but around here, great barbecue always does.
That's the Dino way.

We’re bringing back a favorite from the Dino recipe vault for 🔥🥚
Creole Deviled Eggs have been a longtime favorite of Dinosaur Bar-B-Que founder John Stage ever since his mother made them for family cookouts growing up.
Creamy. Tangy. Hit with Creole mustard and Cajun spice.
The kind of side dish that somehow disappears before the ribs even hit the table.
🔖 Save this for Memorial Day Weekend.

What people say
Dinosaur BBQ on West Willow Street in New York delivers the kind of barbecue experience that feels both iconic and genuinely fun. Known for legendary “que,” the restaurant has grown from its 1988 roots in downtown Syracuse into one of America’s standout barbecue spots, with multiple locations and a reputation that keeps getting stronger.
The atmosphere is a big part of the appeal. Expect a unique vibe, a lively bar scene, and plenty of energy—like you’re stepping into a place where people come to celebrate good food and great company. Whether you’re stopping by for smoked favorites or settling in for drinks at the bar, it’s easy to see why it draws crowds.
Food-wise, Dinosaur BBQ leans hard into what it does best: bold, smoky barbecue with crowd-pleasing sides and standout items that keep guests coming back. The menu also reflects the brand’s broader love of comfort-food classics, including moments where the smokehouse meets other oven-fired goodness.
If you’re looking for barbecue with personality—served in a setting that’s equal parts flavor-forward and high-energy—Dinosaur BBQ is an excellent choice on West Willow Street.
