Ethiopian Teff Matzah / Ya Fassikah kita / Nay Wurenah kicha
1. In a large bowl, combine 2 cups of teff with a pinch of salt.
2. Gradually add water to the mixture to create a paste.
3. Let the paste sit for 5 minutes.
4. Warm a skillet over medium heat and add a few drops of oil to prevent sticking.
5. Take a handful of the paste, flatten it out on the pan, and cover.
6. Cook each side for 3-5 minutes.
7. Flip and repeat until each side is fully cooked

I’m deeply honored that Gursha has been recognized among the New York Times Best Cookbooks. This acknowledgment allows me to share the rich stories and ancient traditions of Ethiopian Jewry with the world.
Congratulations to all the incredible authors nominated celebrating our diverse diaspora through food is such a beautiful way to engage and learn about one another.
This book truly took a village. My heartfelt gratitude to my collaborator Elisa, photographer Clay, food designer Roscoe, agent Sally, my editor Tom, and the elders and community members who shared their precious stories during countless interviews. My family’s unwavering support made this journey possible.

Join us for Sigd this Thursday, 11/20 🤍
Sigd is a unique holiday preserved by Ethiopian Jews for nearly 3,000 years. Celebrated 50 days after Yom Kippur, this sacred day traces back to the time of Ezra and Nehemiah in Babylon, when Jews yearned for the return to Jerusalem and the rebuilding of the Temple.
For centuries, the Beta Israel community held tight to this tradition during our exile, making Sigd a powerful symbol of longing, faith, and unity.
The first half of the day involves fasting and prayer, followed by thanksgiving and celebration - reflecting both mourning for our separation from Jerusalem and joy for our spiritual connection.
Since 2008, Sigd has been recognized as an official national holiday in Israel, and its message resonates throughout the Jewish Diaspora today. It’s a holiday that speaks to all Jews about unity, giving thanks, and the eternal connection to our homeland.
At its heart, Sigd represents the resilience of Jewish tradition and the power of community to preserve sacred practices across millennia. It reminds us that Jewish diversity strengthens our people, and that every Jewish community contributes unique wisdom to our collective story.
This year, Sigd falls on 11/20/25: May we all find inspiration in this ancient tradition of hope, unity, and return 🕊️
