The first week of May's cookie bars shipped out and the rankings are in! In a surprise turn of events, my peanut butter bar was not ranked #1. Outshined by the warm weather appropriate zesty ritzy lemon key lime pie bar!
Honorable mention goes out to the horchata brownie bar - the ganache is made with overnight homemade horchata creating the most cinnamon-y chocolate ganache. Pairs great with your morning coffee!

Recipe for Edible Infused Cookie Dough
**Ingredients**
2 sticks butter (226 grams)
100 grams sugar (1/2 cup)
200 grams dark brown sugar (1 cup)
1/4 cup whole milk
1 tablespoon vanilla extract/vanilla bean paste
315 grams flour (2 1/2 cups)
2 High Confectionary infused chocolate bars
1.5 tsp salt
**Directions**
1. Preheat the oven to 350
2. Spread the flour evenly onto a baking sheet and bake for 6–8 minutes, or until it reaches 160°F. Allow the flour to cool completely.
3. In a mixing bowl, cream together the butter and sugars until smooth and fully combined, with no visible butter chunks.
4. Add the milk and vanilla extract, mixing until incorporated.
5. Once the flour has cooled, sift it through a fine-mesh sieve to remove any clumps. Whisk in the salt.
6. Add the flour mixture to the butter mixture and mix until a dough forms.
7. Roughly chop 2 bars of High Confectionary chocolate and mix into the dough
8. Roll the dough into balls and place them in the freezer for at least 15 minutes, or until firm.
9. Melt chocolate (could be High Confectionary or regular chocolate) over a double boiler
10. Dip the frozen cookie dough balls into the melted chocolate, allowing any excess to drip off.
11. Sprinkle with flaky salt and let set.
12. Store in the refrigerator or freezer until ready to be enjoyed :)
