Introducing: Ramp Risotto with Almond & Pine Nut Crusted Fluke.
Now, what exactly is a “ramp”?
Good Q.
With their small white bulbs and stringy roots, ramps — AKA wild leeks — look like ordinary spring onions, but there’s nothing ordinary about these bulbous perennials.
Edible from top to bottom, inside and out, ramps are actually a rare delicacy, available for just a few brief weeks in the spring.
They thrive in wild wooded areas along the Appalachian mountain range, and take years to crop up.
But the moment they surface, ramps have to be reaped — carefully by hand, so gently that foragers often harvest only one leaf per plant.
(Hence, why you don’t see these onion lookalikes at your local supermarket).
But lucky for us, our old, dear friend knows of various secret ramp habitats along the Hudson Valley and, together with his daughters, he harvests them for us.
Once a iykyk kind of thing, the secret’s now out, which means there are concerns about over-harvesting….and our ramp dishes selling out.

Ok, people. We have A LOT of new menu items that may just make you reconsider your usual go-tos. Here goes:
Jam and Brie Baguette: A toasted baguette topped with house-made red pepper jam, creamy brie and fresh arugula, served with a side salad
Sweet Heat Pizza: Our house-made mozzarella, with Alex’s vegetarian pepperoni 🍕, drizzled with house-made hot honey and parmesan cheese
Winter Farro Bowl: Farro mixed with roasted butternut squash, celery, house-made granola, cilantro, craisins and tossed with radicchio, arugula and topped with an herbed tahini dressing.
Sesame Ginger Salmon Salad: Crunchy cabbage and shredded mixed greens with thinly-sliced watermelon radish, fresh cucumbers, carrots, scallions, topped with (you guessed it!) pan-seared salmon, and dressed in a house-made sesame ginger dressing topped with gomasio.
