It’s finally spring! Well, the weather might need a reminder but we’ve embraced the delicious flavors and fresh produce of the new season.
This is our delicious Spring Roasted Vegetable Quinoa with Pesto Vinaigrette featuring lots of roasted zucchini, yellow squash, broccoli, tomatoes and scallions with herbed quinoa and an herbaceous pesto vinaigrette. Feeling hungry? 😋
