One of their specials that stands out is the sushi grade tuna tartare with black sesame, ginger, and avocado - a must-try dish for seafood lovers. The owner and founder Lionel Guy-Bremond has an impressive background in the industry having worked at Felix as a busboy, La Goulue as a server, Le Zoo as a manager before opening his first bistro in Paris in 1998. Ten years ago he opened Café Paulette inspired by the character and history of Fort Greene.
