Hoja Santa. Sotol, nitro muddled Hoja Santa, a little bit of Cilantro, orange syrup and lime. Springtime herby drink with a bite.
Ancient Aztecs used the herb, often referred to as tlanapaquelite, to flavor their traditional, bitter chocolate drinks. They would also use the leaves for medicinal purposes, including treating rheumatism, asthma, bronchitis, and stomach ailments, so all in all there’s no losing in drinking this one.

Our beef tartar with buckwheat toasted in tons of brown butter, seasoned with pimentón oil, a little bit of vinegar, fresh grated horseradish, cheddar that we smoke at the bar and shaved Brazil nuts.

Our tuna mayo with potato crisps, coffee and red onions. Poached tuna belly mixed with coffee mayo, special spice mix and a little bit of raw red onions, all meant to be eaten with the thinnest, crunchiest potato chips.
