Anatomy of a Dish: Puntarelle Salad
Every year at The Four Horsemen, we look forward to chicory season. Chef Nick always has his take on Puntarelle alla Romana on the menu during these colder months, and while it changes a little from year to year, the concept stays the same. Bitter crunchy greens, briny and umami rich anchovies, electric acidity and an unreasonable amount of garlic. This year he stayed true to the classic dish, but used a few special ingredients such as tardivo and parmigiano reggiano.
See our slideshow for play by play of building this simple but oh so delightful dish that only comes around in peak winter.
1. Start with grated garlic and minced anchovy.
2. Add olive oil, red wine vinegar, and a squeeze of lemon.
3. Add your greens.
4. Parm + Maldon
5. Mix, plate, eat!

🐎🐎🐎🐎 members only!
This weekend is the cut off for our Wine, Cocktail, and Coffee subscriptions! We have roughly 15 slots open for each, then we’ll be at capacity.
Sunday marks the end of January. Another month down in Pandemic winter. We can see the sunshine coming - sometimes - when we look for it, we just have to get through this last stretch together! Every little silver lining helps. We’ve put together these monthly packages with this in mind. Wine, cocktail, and coffee packages to bring something new into your home routine. These monthly packages are a treat to yourself, something to look forward to and a way to stay connected to the places you love.
Our goal here is to deliver the inimitable experience of sitting at the bar and taking the recommendation of the person making the drink - knowing you’re in good hands - and trying something just slightly off your radar that you didn’t yet know you love.

📣📣📣 new producer alert! We just received our first shipment from Thibault Capellaro and keep hearing and various front of house saying “have you tried these wines yet?!” Available now for you to try via our webstore. From our Wine Director, Justin:
“Thibaud Capellaro is a first generation winemaker working in the town of Condrieu and we are incredibly excited to be selling his first vintage here at the restaurant. His first wines are a negociant project released under the name Slope (named after the incredibly steep vineyards in his region) and made with organic grapes bought from like-minded growers in the area. Eventually Thibauld will release wines made from grapes that he farms himself on three small plots he owns in Côte-Rôtie, but that is a long term project that involves terracing the vineyards, planting vines and many other aspects of farming that will take years of hard work to yield results. In the meantime we have been blown away by these bottles, which we feel are some of the most exciting wines we have tasted this year. We are offering 3 cuvees: KIima (85% gamay from Cote du Lyonaiss and 15% syrah from Ardeche, done with carbonic maceration in steel and 10 months in old oak. 900 bottles made) and Terra (100% syrah from Saint-Joseph and Ardeche, macerated whole cluster in steel and aged in neutral barrels and amphora. 2300 bottles made). it's not very often we get a chance to start a relationship with a winemaker in their first vintage and follow them along through their career but we can tell that this is going to be a winemaker that we will be working with and following for a long time to come.”

What people say
The Four Horsemen is a neighborhood gem that offers an exceptional dining experience. This restaurant serves food until 11pm and pours wine till late every day, making it the perfect spot for a late-night meal or drinks with friends. The set lunch service is also a great option for those looking for a quick and delicious meal.
The menu at The Four Horsemen is carefully curated, featuring dishes that are both innovative and flavorful. The restaurant's commitment to using fresh, high-quality ingredients is evident in every dish they serve. Whether you're in the mood for something light or hearty, there's something on the menu to satisfy your cravings.
In addition to their exceptional food and wine offerings, The Four Horsemen also has a strong sense of community. They recently held a fundraiser for their beloved Prep Manager, Chantal, which was met with overwhelming support from the community.
While the restaurant had to temporarily close due to a COVID exposure on staff earlier this year, they took swift action to ensure the safety of their customers and staff. Their strict masking and sanitation protocols have worked in keeping any kind of spread at bay.
Overall, The Four Horsemen is a must-visit destination for anyone looking for an unforgettable dining experience in Grand Street.
