Last night, we debuted a drink concept (and collab) that we’re really proud of. And we had an amazing time with everyone who came out to give it a first taste. The consensus? Delicious. Delectable. Divine.

Introducing: the Noor Chai Martini. Featuring velvety smooth, cinnamon-y chai from and the sweet notes of vanilla-infused vodka. Shaken with love by our talented mixologists behind the bar, dreamed up by our team for a couple months, a recipe tweaked until the flavors were mastered. And now it’s ready.

“Why would you drink an when you could sip on THIS?” asked one foodie guest. We agree. Careful, it’s a bit TOO delicious—if that’s even possible.

Just in time to spice up your summer, just warm-yet-light enough for cozy Spring evenings in our Drawing Room. Come try one for yourself. We’ll see you soon ☕️🍸

We’re so excited for Mother’s Day, we’re practically singing about it! Well, we are named after a songbird…

The name Passerine—an order of songbirds prominent in India—was inspired by the Indian folktale, “The Songbird and The King.” In the tale, a king captures a songbird to enjoy its melodies forever, but the bird stops singing in captivity. Eventually the bird is freed and its joyful song returns, teaching the king an important lesson about the beauty of freedom. Drawing from this story, our menu highlights an endless curiosity and surprises diners with a personal perspective on Indian cuisine that has no bounds.

the story behind a dish hits different when the spices were literally ground by the chef’s mom. is michelin-starred Chef Chetan Shetty’s love letter to Pune — his hometown in western India — filtered through a New York lens.

the spice blends are made by his mother and you can taste the love.

what sets this place apart is the textural intentionality in every bite — the crunch of the shrimp Koliwada, the silkiness of the palak, the tenderness of the 18-hour braised beef nihari. nothing is an accident here.
don’t sleep on: the Kolhapuri lamb tartare, the Sea Bass Vadagam with Konkani curry, and PLEASE save room for the ice cream sandwich — it comes wrapped in brown paper sealed with a vintage bird stamp and it’s one of the most charming desserts.

Just a few more photos from when we had the honor of hosting the prestigious Chaîne Bailliage de New York during their recent Conference of La Chaîne des Rôtisseurs — the oldest and largest food and wine society — celebrating gastronomic and culinary excellence in NYC and around the world. The evening hosted some of the organizations most luminous members.

“Passerine: The Songbird’s Flight — Curiosity, Spice & the Modern Indian Table”

Set in the heart of Manhattan, Passerine provided a vibrant and elegant backdrop for an evening centered on curiosity, spice, and the evolving language of the modern Indian table.
The reception set the tone beautifully, with bites including Paneer Tart with Mint & Caramelized Onion, Masala Uttapam with Cream Cheese & Kaffir Lime, Tuna Shisho Chaat with Avocado & Chives, and Lamb Taco with Red Onion Salsa, paired with Domaine José Dhondt Blanc de Blancs Grand Cru Champagne, NV. It was an opening full of brightness, flavor, and conversation, as Confrères and Consoeurs gathered in anticipation of the meal ahead.
Dinner continued that journey with a series of memorable and beautifully composed courses. Tuna Tartlet with Spiced Tuna and Caviar alongside Murruku with avocado and trout roe, paired with Château Carbonnieux Blanc Bordeaux 2019, offered a striking and elegant start. A following course of Toast with Mushroom Jam and Prosciutto and Shrimp Koliwada with corn and potato salli, served with Dr. Konstantin Frank Rkatsiteli 2020 from the Finger Lakes, brought richness and personality with a wonderful sense of play and balance.
One of the evening’s standout moments came with the Monk Fish in Konkan Malwani curry with coconut, paired with Ken Forrester Chenin Blanc “The FMC” 2020 from Stellenbosch. This course captured the heart of the evening’s theme — layered spice, graceful technique, and a depth of flavor that lingered long after the plate was cleared.
The main courses, Ghee Roast Chicken with Saag, chili masala, and paratha and Beef Short Rib with Nihari and mushrooms, delivered warmth, richness, and extraordinary depth, beautifully accompanied by Château Haut-Brion Bordeaux 2004 served en Jeroboam. It was a pairing and presentation worthy of the occasion — generous, grand, and deeply memorable.
Dessert offered a soft and fragrant close to the evening with Pistachio Nimish, chai ice cream, and rose ice, a finish that felt both delicate and expressive, bringing the menu to a graceful and satisfying conclusion.

Last week, the prestigious of NYC gathered at Passerine for what they later told us was “a dinner that felt both transportive and unmistakably of this city — a celebration of culinary heritage, modern imagination, and the kind of fellowship that continues to define the spirit of the Chaîne.”
La Chaîne des Rôttisseurs is the oldest and largest gastronomic organization in the world. The Bailliage de New York is the oldest Chaine chapter in the United States. Passerine was (to say the least!) honored to host the chapter’s conference and gathering this year.
