1. Gather fresh tomatoes, airtight glass jars, vinegar, salt, sugar, and garlic.
2. Boil 2 liters of water and pack 2.5 kg of tomatoes into the jars.
3. Add finely chopped garlic.
4. Pour boiling water over tomatoes, cover, and let sit for 20 mins.
5. Add vinegar, sugar, and salt to the water.
6. Seal jars, wrap in a blanket to cool slowly, then store in a cool, dark place.

WOULD YOU EAT THESE CRISPY FRIED MUSHROOMS WITH COOL RANCH DIP 🍄🥒🍴

Get ready for a crunchy, savory treat with these Crispy Fried Mushrooms! Served alongside a refreshing Cool Ranch Dip, these golden-battered mushrooms are perfect for a snack, appetizer, or party platter.

Ingredients:

For the Crispy Fried Mushrooms:

1 lb button or cremini mushrooms, cleaned and stems trimmed
1 cup all-purpose flour
1 tsp garlic powder
1 tsp paprika
1/2 tsp onion powder
Salt and pepper to taste
2 large eggs
1/2 cup milk
1 cup breadcrumbs (panko for extra crunch)
Vegetable oil for frying
For the Cool Ranch Dip:

1 cup sour cream
1/4 cup mayonnaise
1 tbsp dried parsley
1 tbsp dried dill
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried chives
1 tbsp fresh lemon juice
Salt and pepper to taste
Instructions:

Prepare the Mushrooms:

Pat the cleaned mushrooms dry with paper towels. In a shallow dish, mix together the flour, garlic powder, paprika, onion powder, salt, and pepper.
Set Up the Breading Station:

In one shallow dish, whisk together the eggs and milk. In another shallow dish, place the breadcrumbs.
Bread the Mushrooms:

Coat each mushroom in the seasoned flour, shaking off any excess. Dip the floured mushroom into the egg mixture, then roll it in the breadcrumbs, pressing gently to adhere. Repeat with all mushrooms.
Fry the Mushrooms:

Heat about 1 inch of vegetable oil in a deep skillet or pot to 350°F (175°C). Fry the breaded mushrooms in batches, making sure not to overcrowd the pan. Fry for 3-4 minutes, or until golden brown and crispy. Remove and drain on paper towels.
Make the Cool Ranch Dip:

In a small bowl, mix together the sour cream, mayonnaise, dried parsley, dried dill, garlic powder, onion powder, dried chives, lemon juice, salt, and pepper. Stir until well combined and adjust seasoning to taste.
Serve:

Serve the crispy fried mushrooms hot with a side of Cool Ranch Dip for dipping.

Ham and Bean Soup😋
Old-fashioned ham and beans recipe made with navy beans and smoked ham using a crockpot or stove for true, homemade comfort. Ham & bean soup is an easy, delicious way to use leftover holiday ham or smoked ham hock.

Ingredients:
1 pound Dried Navy Beans 2 ½ cups sorted and rinsed
1.5 pound Ham Bone with meat
1/2 large Onion diced (1 cup)
1 large Celery Rib diced (1 cup)
5 cloves Garlic minced
1 teaspoon Dried Thyme or 3 fresh sprigs
1 teaspoon Sea Salt or to taste
1/2 teaspoon Black Pepper
6 cups Water
1 large Carrot diced (1 cup)

Instructions:
Crockpot Instructions (see stove instructions below)
Add NAVY BEANS, BONE, ONION, CELERY, GARLIC, THYME, SALT, and BLACK PEPPER to a crock pot.
Add enough WATER to cover the beans by 1 inch.
Set the slow cooker on low for 5 hours. *see recipe footnote about unsoaked beans.
At around the 5 hour mark, stir in CARROTS, cover the slow cooker, and continue cooking until beans and carrots soften to your liking.
Transfer bone out of the pot. Remove ham, shred, and add back to the beans. Discard all gristle and bone before serving.

Ingredients:
1 large chicken
2 onions, chopped
4 carrots, sliced
3 celery stalks, sliced
6 garlic cloves, minced
8 cups chicken broth
2 bay leaves
Salt and pepper, to taste
2 tbsp parsley, chopped (optional)
Instructions:
Rinse the chicken and place it in a large pot.
Add chopped onions, sliced carrots, sliced celery, minced garlic, chicken broth, and bay leaves to the pot.
Bring to a boil and then reduce heat to low.
Cover the pot and simmer for 1.5 to 2 hours, until the chicken is cooked through.
Remove the chicken from the pot and let it cool.
Strain the broth and return it to the pot.
Remove the chicken meat from the bones and shred it into small pieces.
Add the shredded chicken back to the broth.
Season with salt and pepper to taste.
Serve hot, garnished with chopped parsley (optional). Enjoy!

Tomato Soup with Cheese and Onion Toast

Ingredients:

For the Tomato Soup:
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1 carrot, chopped
2 cans (28 oz each) whole peeled tomatoes
4 cups vegetable broth
2 tbsp tomato paste
1 tsp sugar
1 tsp dried basil
1/2 tsp dried oregano
Salt and pepper to taste
Fresh basil, for garnish
For the Cheese and Onion Toast:
4 slices of crusty bread
2 tbsp butter, softened
1 small onion, thinly sliced
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese

Instructions:

Prepare the Tomato Soup:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5-7 minutes.
Add the minced garlic and chopped carrot. Cook for another 3-4 minutes until the vegetables are tender.
Stir in the tomato paste and cook for 1-2 minutes.
Add the whole peeled tomatoes (with their juice), vegetable broth, sugar, dried basil, and dried oregano. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes.
Use an immersion blender to blend the soup until smooth. Alternatively, you can blend the soup in batches using a regular blender.
Season with salt and pepper to taste. Keep the soup warm on low heat.
Prepare the Cheese and Onion Toast:
Preheat your oven's broiler or a toaster oven.
Spread the softened butter on one side of each slice of bread.
Place the buttered slices on a baking sheet, buttered side up. Top with the thinly sliced onion and then sprinkle the shredded cheddar and Monterey Jack cheeses evenly over each slice.
Broil until the cheese is melted and bubbly, about 3-5 minutes. Keep a close eye on the toast to prevent burning.
