Most fries are made in minutes.
Ours take 2 days.
At Medium Rare, our frites are hand cut, soaked overnight, then double fried the traditional French way.
The first fry, known as a blanch, is done at a low temperature to gently cook the potato from the inside out. After resting overnight, the frites are fried a second time at a higher heat, creating that perfectly crispy golden exterior while keeping the inside soft and fluffy.
Itās extra work. But when the fries hit the table, you taste the difference š«¶š¼
