๐๐ Creamy Lemon Chicken with Herbed Rice, Crispy Potatoes & Steamed Broccoli ๐ฅฆโจ

For the Creamy Lemon Chicken:
2 chicken breasts (halved lengthwise) or 4 thin fillets ๐

2 tbsp butter

For the Herbed Rice:
1 cup basmati or jasmine rice
2 cups water or chicken broth
1 tbsp butter
1 tsp dried parsley or dill
Salt to taste
For the Crispy Potatoes:

2 tbsp olive oil
Salt, pepper, paprika
For the Steamed Broccoli:
1 medium head broccoli, cut into florets ๐ฅฆ

๐ก 1. Cook the Chicken
Season chicken with salt, pepper, and Italian seasoning.
Heat olive oil and butter in a skillet over medium heat.
Cook chicken 4โ5 minutes per side until golden and cooked through. Remove and set aside.
๐ง 2. Make the Creamy Lemon Sauce
In the same skillet, add minced garlic; sautรฉ 30 seconds.
Pour in chicken broth, lemon juice, and zest. Scrape up browned bits for flavor.
Add cream, Dijon mustard, and Parmesan. Stir until smooth and slightly thickened (3โ5 min).
Return chicken to the pan and simmer 2โ3 minutes.

In a pot, combine rice, water/broth, butter, salt, and herbs.
Bring to a boil, then reduce to low heat, cover, and cook for 15 minutes.
Fluff with a fork before serving.
