Oven-Baked Lemon Herb Chicken Thighs
Ingredients:
6 bone-in, skin-on chicken thighs (about 2 lbs / 900 g)
2 tbsp (30 ml) olive oil
1 lemon, zested and juiced
3 cloves garlic, minced
1 tsp (5 g) salt
½ tsp (2 g) black pepper
1 tsp dried oregano
1 tsp dried thyme
1 tsp paprika
Fresh parsley, chopped (for garnish)
Instructions:
Preheat your oven to 400°F (200°C). Line a baking dish or sheet pan with parchment paper or lightly grease it.
In a small bowl, whisk together the olive oil, lemon zest, lemon juice, garlic, salt, black pepper, oregano, thyme, and paprika.
Pat the chicken thighs dry with paper towels and place them in a large bowl or baking dish.
Pour the lemon herb marinade over the chicken and rub it evenly on all sides. Let marinate for 15–30 minutes if time allows.
Arrange the chicken thighs skin-side up in the prepared baking dish.
Bake for 35–45 minutes, or until the skin is golden brown and crispy and the internal temperature reaches 165°F (74°C).
For extra crispy skin, broil for 2–3 minutes at the end of cooking.
Remove from the oven and let rest for 5 minutes before serving.
Garnish with fresh parsley and extra lemon wedges.
