We are open during the flood clean up. This is the second major flood for us. We are not unused to losing things material and sentimental. Miraculously, all wine is completely intact! Not a single drop lost! Cheers!

Congestion pricing works!!! 700 million in research and development. Millions of dollars collected daily from people who don’t use the subway to fix the subway they don’t use because people who use the subway don’t pay for riding the subway. But it’s all worth it! Fast, clean, safe, efficient. We can’t get enough and can’t wait for congestion pricing to increase!

It is with an elated heart that we announce the end of a giant “wine” conglomerate whose unscrupulous chemical experiments have given wine a terrible reputation. Today we reiterate our point that wine consumption is not down. CONSUMER TASTE IS UP! When people gather together to eat a prepared meal using plates and utensils or simply chill and socialize, they increasingly seek moderately priced quality wine. We celebrate the departure of this nasty h***h factory by raising a glass of sustainably farmed, family-owned excellence. Stop by today to meet Alex, our new team member and a true wine expert.
Gallo announced the closure of a large Napa Valley production facility and the elimination of jobs across two counties — a stark sign of the shifting landscape around alcohol consumption in America…

Here is the explanation of folding the cheese from Bourdainworld.com. We don’t know how to make this any clearer!
“Unlike simply stirring an ingredient into a mixture, folding is a gentle technique designed to combine components without deflating them. According to America’s Test Kitchen, folding involves sweeping a spatula around the bowl and then turning the mixture over onto itself, carefully incorporating ingredients without aggressively mixing. The goal is to maintain air and structure, especially when working with delicate batters.
Folding is often recommended when combining a light, airy mixture with something heavier. Taste of Home explains that the technique helps preserve lift and texture. If overmixed, airy ingredients like whipped egg whites can collapse, resulting in dense, flat baked goods instead of light, fluffy ones.”
