A tomahawk is a bone-in ribeye, cut from the rib section and left on the full frenched bone. The marbling runs deep and the texture is naturally tender. Dry-aging it in-house for 28 days takes that further, pulling moisture out and concentrating the flavor.

Canadian bacon comes from the pork loin, one of the leanest parts of the pig, which is why it looks more like a thick slice of ham than a rasher of bacon.
At Harry's, we cure and smoke our Canadian bacon in-house. The curing draws out moisture, concentrates the flavor, and gives it that deep, rosy color. From there it goes into the smoker, where the heat cooks it through while the smoke works its way into every slice. What you end up with is something tender, a little sweet, and smoky.
