Maison BARNES is born of a collective of extraordinary individuals devoted to the Art of Living - and at its culinary core stands Executive Chef

A Lyonnais by training, Romain’s journey has taken him through some of France’s and New York’s most respected kitchens: Le Potager des Halles, Les Bonnes Manières, Café Boulud and Restaurant Daniel, where he rose to Executive Sous Chef under Eddy Leroux. Today he leads the kitchen of Maison BARNES and Café Boulud, bringing rigorous technique and a refined sensibility to every plate.

Romain thinks of himself as an artist first and a chef second; that artistic eye is evident in dishes that are as visually striking as they are delicious. It is precisely this fusion of art and gastronomy, of incredible products and dedication to excellence that elevates our table and helped earn us Michelin recognition.

We are grateful to have Chef Romain Paumier shaping our culinary identity. His work exemplifies how gastronomy, craftsmanship and a commitment to excellence are woven into Maison BARNES’ mission as a curator of the Art de Vivre.
