It's our first market day of the 2026 season, and today we're featuring our Vanilla Co**ha! Even though we've been making these classics since the very beginning, they're new in a way because we're using a new mix of grains for our dough. This current recipe uses Bolles from Morningstar Farm in VT, Nu East from Spikenard farm in VA, and Sonora from Ramona Farms in AZ. It's World Fair Trade Day, and we want to take a moment to highlight a few of our suppliers who uphold values in everything they do.
1. supplies all of our coffee and most of our chocolate. Their mission is to use ethical sourcing to help the 165 million people who depend on coffee ane chocolate for their livelihood to escape poverty. Moka has already purchased 276,511 pounds of beans and planted 640,600 trees. In addition to sourcing fantastic single-origin products from many countries (like our favorite coffee from Mexico!), they operate a farm in Cameroon which also serves as a training center for farmers.
2. supplies all our delicious spices. We use their anise seed in our co**ha dough, and if you've tried our seasonal cinnamon co**ha, you've heard us rave about their Korintje cinnamon. Frontier is a 50,000 members strong cooperative, and their commitment to sustainable, regenerative agriculture shapes everything they do. Their fair-trade spices really do change lives!
3. supplies our teas and the rest of our chocolate. They partner with over 40 farmer cooperatives around the world. Their intentionality about sourcing from small farms is at the core of their fair-trade mission to challenge the existing trade model which is so harmful to farmers and the planet.
4. supplies all of our sugar. From our organic cane sugar which goes into every single co**ha, to our panela, light and dark brown sugars, turbinado, and powdered sugar, if you've had something sweet from our bakery, Wholesome made it happen. They were the first company in the U.S. to establish Fair-Trade standards for sweeteners, and their commitment to paying farmers fairly helps not only those who grow the sugarcane but also the communities that those farmers are a part of.
As bakers, we feel it's so important that the farmers who grew the ingredients we get to use were compensated fairly for their work. It's simply the right thing to do. Together we can make a difference in the lives of farmers everywhere!
