Still overwhelmed by the James
Beard Award nomination from last week.
I remember the first time I heard about the James Beard Awards more than 20 years ago. I was curious about how big of a deal this award really was. Chefs dressed up, walking into the ceremony like movie stars on the red carpet at the Oscars-that felt crazy to me. For a chef.
For people the world often just calls “cooks.’
Last week, when I received a phone call from Ally and Katy congratulating me on being named a James Beard Award semifinalist for Best Chef: New York State-alongside 19 incredibly talented chefs—I was in shock.
The feeling, the pride, the responsibility all hit my heart at once. My heart dropped. My eyes filled with tears. I sat down, looked up at the ceiling, and suddenly all the memories came rushing back. To me, this is the greatest honor-the highest recognition for a cook, for a chef.
Back to 1997, when I first moved to New York. A teenage boy who didn’t speak English, had no clear direction, and had no idea what the future would hold. Just trying to survive. Trying to learn. Trying to find a place in this city.
Fast forward to 2023, when we opened S***a. Just two years later, to be recognized by the James Beard Foundation is something I never could have imagined back then.
I have devoted my life to this craft. I have walked this path with everything I had and carried its spirit with me.
The amount of effort, sacrifice, and dedication poured into this journey is simply immeasurable. Words are not enough to describe it-but in this moment, every second spent on this path feels worth it.
This nomination is not just about me. It belongs to my incredible team, who show up every day with heart, discipline, and pride. It belongs to our guests, who believed in me and supported me from the very beginning.

This one-day-only event will feature an exclusive 20-course Edomae-style omakase, accompanied by an optional sake pairing showcasing nine of Kubota’s most rare and exceptional labels. The selection includes Senshin Junmai Daiginjo, Tokugetsu Junmai Daiginjo, Kubota Manjyu Original Yeast YX Edition, and very limited-edition Tsugu, among other premium offerings.
