The Porterhouse — two distinct textures, one cut. 🥩
Dry-aged in-house for 45+ days, this cut marries time with two classic steaks. On one side: New York strip — deeply beefy, with a firm bite and concentrated, almost nutty flavor from the aging. On the other: filet mignon — softer, finer grain, with a buttery tenderness. The dry-aging process pulls out moisture and intensifies everything that’s left — giving you a darker crust, and more pronounced umami.
The porterhouse traces back to 19th century New York “porter houses” — early taverns where porter beer was served alongside hearty cuts of beef. One telling of its origin: a late-night guest arrived after the kitchen had closed, and the owner carved a steak directly from the short loin to serve him. The porterhouse was born.
From our Reserve Cuts menu — a daily selection of limited dry-aged steaks, pulled directly from our aging room. Available in limited quantities; Inquire with your server!

The sommelier role is one of the most demanding and historically male-dominated in hospitality. Yet, across our restaurants, more than a dozen women rise to the challenge brilliantly every single night. 👏
In honor of Women’s History Month, we asked them what’s in their glass. The answer? Something iconic:
🍾Grand Siècle Iteration No 26 by Laurent-Perrier, by the glass at COTE
🍾Laurent-Perrier Cuvée Rosé, by the glass at COQODAQ
A Champagne house known for championing female leadership in a region and industry that hasn’t always made it easy.
Join us this month and let our sommeliers pour you something worth celebrating.🥂Cheers to the women raising the bar (and a glass)!

Ginza meets Gotham. 🗽✨
Before the stars. Before the legacy. Before the global acclaim, Chef Masahiro Yosh*take lived and worked in New York in his mid-20s. A small apartment. A young family. Long days. Little glamour. New York left its mark.
That early chapter became quiet motivation. A feeling of a chapter left open. Shaping the discipline and precision that would later define his career. Over time, it became a promise: to return to New York not just to come back, but to do it right.
From earning three Michelin stars in Ginza to three more in Hong Kong, his relentless pursuit of precision, rooted in Shokunin discipline and Edomae tradition, was forged by that early New York experience.
Now, years later, he returns stronger, prepared, and with something unfinished to complete.
Gracious Hospitality and are honored to welcome Chef Yosh*take to , where this homecoming becomes his next great chapter.
And as this story continues, we’re looking for passionate hospitality professionals to join the team and help bring this vision to life. Apply via link in bio.
New York, this one is personal. 🍣
