Ingredients (Serves 6):
1 lb elbow macaroni
2 cups whole milk
1 cup heavy cream
1/4 cup unsalted butter
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon ground white pepper (or black pepper)
Cheese Blend (very important!):
1 cup sharp cheddar cheese, shredded
1 cup mild cheddar cheese, shredded
1 cup Colby Jack cheese, shredded
1/2 cup American cheese, cubed or slices torn (adds smoothness)
Optional: 1/4 cup Parmesan, finely grated (for extra flavor)
๐ฅ Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil.
Cook elbow macaroni until just al dente. Drain and set aside.
2. Make the Cheese Sauce (Roux Method):
In a large saucepan, melt the butter over medium heat.
Whisk in the flour, and cook for 1โ2 minutes to form a roux (donโt brown it).
Slowly whisk in the milk and cream. Stir constantly until the sauce thickens, about 4โ5 minutes.
Stir in salt, garlic powder, paprika, and white pepper.
3. Add the Cheeses:
Reduce heat to low. Add all the cheeses gradually, stirring until completely melted and smooth.
Reserve a little cheddar or Colby Jack for the topping.
4. Combine with Pasta:
Add the cooked pasta to the cheese sauce and mix well until fully coated.
5. Bake It:
Preheat oven to 375ยฐF (190ยฐC).
Transfer the mac & cheese to a greased 9x13" baking dish.
Sprinkle the reserved cheese over the top.
Bake uncovered for 15โ20 minutes, or until the top is melted and slightly golden.
6. Broil (Optional):
For that signature golden crust Chick-fil-A-style, broil the top for 2โ3 minutes until bubbly and brownedโwatch carefully!
