Fresh za’atar from the market today. 🌿
Growing up in Palestine, za’atar season was something we looked forward to every year. My family and I would head into the hills and mountains, gathering wild za’atar by hand, filling our baskets with the fragrant herb that has nourished generations.
Back home, the kitchen would come alive. Some of the za’atar would be dried and mixed with olive oil, while some would find its way into fresh, warm fatayer straight from the oven. The smell alone could bring the whole family to the table.
Za’atar is more than an herb in Palestinian culture—it is memory, identity, and a connection to the land. It is so deeply rooted in our heritage that the great Palestinian poet Mahmoud Darwish wrote about it, turning a simple breakfast of olive oil and za’atar into a symbol of home, belonging, and resilience.
Today, one smell of fresh za’atar still takes me back to those hikes, those family gatherings, and the taste of Palestine.
