Meet Dwayne Thomas, Manhatta’s lead expediter.
Dwayne discovered his passion for hospitality at seventeen as a barback and has since worked across nearly every role, from front of house to garde manager and pastry, before stepping into his current position as lead expediter.
Since joining Manhatta in 2022, he has become a vital link between the kitchen and dining room, ensuring every service runs seamlessly from the first ticket to the final plate of the evening. His team often boasts, “Without Dwayne, there is no Manhatta” — a reflection of the profound impact he has had on the restaurant, culture, and everyone fortunate enough to work alongside him.
When he’s not at Manhatta, Dwayne is also a successful business owner, operating two barbershops in New York City.
Next time you’re in, find Dwayne on the pass.

A Pedreira Albariño 2022 from Rías Baixas shows the depth this grape can achieve. Shaped by the Atlantic and rooted in granite soils, it carries a natural brightness, with a clean, saline edge that feels distinctly coastal.
Pair it alongside our Charcoal Grilled Seabass with Mussels Escabeche—its savory, ocean-driven character mirrors the flavors on the plate.
