It is my honor to introduce THE Margaret Palca of Margaret Palca Bakes at 191 Columbia St between Degraw and Sackett Streets. Margaret has been baking in the area since 1989 when she bought her home in the neighborhood. She started working out of her current location in 1999.
Whether you like excellent affordable coffee, one of the city’s finest bacon-egg-cheese on a soft roll, brownies, lemon squares, cookies, pecan pie, biscotti or any number of other tasty morsels, Margaret Palca Bakes should be an everyday stop as well as a destination visit.
Margaret grew up in Manhattan and discovered Cobble Hill and the Columbia St area while she was making a delivery for her business at that time. She thought it was the greatest neighborhood she’d ever seen and to this day remembers being dazzled by the outstanding butcher shops and fruit stands.
Knowing the incomparable quality of her baked goods, it is surprising to know she was never formally taught. Her training has been through trial and error, although she credits a high school trip to Paris one fortunate summer with laying an auspicious foundation.
The key to Margaret’s sustained success for more than 30 years has to be her discipline and dedication (along with her humble charm). She still shows up to her shop at the crack of dawn (5am!) and works there until 6:30pm.
Margaret has two favorite recollections of the neighborhood.
First, the occasion on which she was shown her home by a realtor and took in the top floor’s breathtaking view out over the East River and downtown Manhattan.
Second, she recalls her neighbors at the time were a colorful lot, primarily coming from a nearby social club. There was a dwarf, many old school neighbors and plenty of car trunks full of random items like lobsters, sneakers, Advil and VCRs.
Trivia: Margaret chose “Margaret Palca Bakes” as the name of her bakery because it spells out quite simply what she does. The more creative name of her prior establishment had raised too many questions.

To get to the bakery and American restaurant on Columbia Street in New York, you can take the subway to Carroll Street station or Bergen Street station. From there, it's just a short walk to the restaurant.
If you prefer to drive, there are several parking garages nearby where you can park your car. Some of these garages include Brooklyn Parking Inc., Icon Parking Systems, and Park Slope Garage.
Please note that driving in New York City can be challenging at times and public transportation is often a more convenient way to get around.
