Chef Tom Valenti was a defining presence in New York’s dining scene, and through Ouest he created something that went far beyond food. It was a restaurant rooted in generosity, craft, and a deep connection to its neighborhood - one of those rare places that truly became part of people’s lives.
His cooking had a clarity and honesty to it, but just as important was the feeling he created in the room. Ouest had a sense of warmth and ease that reflected who he was, and that’s what people carried with them long after they left.

When we took over the space to become Maison Pickle, we were very aware that we were stepping into something meaningful. There’s a real responsibility that comes with that - to respect what was built, and to carry forward the sense of hospitality and connection that defined it.

His impact on the city, and on everyone who experienced his work, is lasting and deeply felt.
