For La Mercerie’s signature bouillabaisse, chef Heloïse Fischbach embarks on a multi-step process. She prepares a rich, fragrant lobster-and-fish broth, which she flambés with Pernod Ricard before adding a blend of aromatics. After the broth simmers for a few hours, each bouillabaisse is composed to order. To the ceramic serving vessel she adds a shellfish tartar, one piece of red snapper, one piece of cod, mussels, cockles, potatoes, and tomatoes before pouring in the broth and covering with a lid, allowing it to cook for around seven minutes.
The dagger-like toast is a slice of baguette with olive oil and a squiggle of rouille made from a base of aïoli, seasoned with lemon juice, paprika, espelette, saffron. Fischbach finishes the bouillabaisse with lemon and lime zest, espelette and fresh parsley.
Not to boast, but it’s one of the most delicious things you’ll eat all summer long.

Bright lime juice, crushed ice and a sprinkling of cinnamon powder create a refreshing tropical profile. La Promesse, served up in a coupe, is a delicate and elegant built with Indigo Gin, Chios Mastic, fresh lemon juice, and lavender syrup, it delivers floral, citrus, and herbal notes.
