Please join us in welcoming Phillip Kirschen-Clark to Bushwick.
Phillip is a lifelong kitchen worker, starting as a dishwasher, into working every position in a kitchen, up to executive chef, and he is soon moving to Marseille to open his own restaurant, A skewer of time and place. Coming soon! .
Along the way he’s worked under Morimoto, Alain Ducasse, Wylie Dufresne, and Paul Liebrandt, before heading his own kitchens at Vandaag and finally Cafe Cluny.
We are super excited to have him for a test run of his menu at Brochette. It’s going to be a lovely lunch, and a perfect meal for the season.

Please join us in the East Village, Wednesday through Friday this week, when we’ll be offering a special menu to fundraise for Danny and Eddy’s brothers funeral expenses. The whole team pitched in to put together a beautiful little menu of Mexican plates, perfect to enjoy in the summer heat. Ceviche, tuna tostada, and a tlayuda tavern pie. All will pair well with a jamaica margarita.
All sales will go directly to the family. We hope to see you! 💗

Danielle’s famous stone fruit salad is back and better than ever. Eddy and Danielle came up with this wild calzone, deconstructed eggplant parm, with its own arrabbiata sauce 🤯

Bushwick is in season with a couple new ones this week. A summer medley of sweet corn and the first peppers, with pancetta, fontina, and pecorino romano. And then a calzone full of beautiful fresh from the ground onions from Lancaster Farm Fresh Co-op and sausage from La Salumina and of course cheeses from Caputo Brothers Creamery 😍

We made a little menu update this week in the East Village. We’ve been serving a tavern pizza version of pissaladiere since we opened, but we just learned about a Ligurian version! So we made it, and ate it, and we love it. Tavern all’Andrea. A new staff favorite. Equally good eaten hot or cold. Bring it home, leave it on the counter, finish it for breakfast. Share it with loved ones. Turn enemies into friends 💗

Sam Schwarz and Robert Cox first met on the streets of Paris before eventually cooking together at Septime there, and Fradei here in Brooklyn. They formed a friendship rooted in a shared approach to food, seasonality, and hospitality. Their work together blends French technique, sustainability, and a deep respect for producers, shaped by years spent cooking in Paris, New York, and beyond.
Robbie is currently the Culinary Director of Hanoi House in New York, while Sam is opening his first restaurant, L’Arcade, in Paris this fall.
I got to eat at Fradei a few times while they were there and I always felt excited, joyful, and nourished during and after. They’ve been friends and regulars at the restaurants for years, so we’re very happy to host them here. I’m so excited they got the band back together to come cook in our wood oven!
