We’ve been experimenting with adaptogenic blends behind the bar.
Two of them: one for Energy and Focus, one for Calm and Relax.
Take it straight as a shot, or have us drop it into any drink on the menu.
Same drink you already order, tuned to where your day is headed.

A wine giant just bought the Phony Negroni. It is the sixth non-alcoholic brand a conglomerate has absorbed in roughly four years.
The labels are different. The colors are different. The cap table is not.
The interesting question isn’t whether non-alcoholic will keep growing. It will. The question is what the shelf will taste like in 2030, when the names on it mostly belong to the same companies that own the alcohol two aisles over.

It looks like we have a beautiful weekend ahead of us in NYC.
And to kick it off we have our usual Thursday Sessions today, when Erli comes back to the room.
Stop by, grab a drink, stay for a while, or just get a coffee and get some work done while live music plays.
We’re open until midnight, music starts at 8. See you later.

Memorial Day.
Some of you are at the park.
Some of you are working.
Some of you needed an excuse to get out of the apartment.
We’re open until midnight, same as any Monday.
Stop in if you need a place to land.

Let’s stop pretending this is about accessibility.
If the people fighting reform of the ADA were actually worried about disabled people being unable to access public spaces, the New York City subway would be accessible by now. It isn’t. Thirty-five years in, and 30 years more to go.
Part 3 of the open letter is up. It lays out what would actually make every business in New York accessible, and why nobody is going to pass it.

Consecutive days in the 90s.
I guess summer has arrived.
The iced tea menu doubled.
Four Bellocq pours:
Peony Peach. White peony, summer peach, dusky lavender.
Tangerine Turmeric. Citrus and turmeric, layered with chamomile, fennel, and vanilla. Classic Court. Full-bodied black with sun-baked depth and a wisp of smoke. Hibiscus Moroccan Rose. Hibiscus with blood orange and Moroccan rose.
Want it functional? Add a focus or calm blend.
352 E 13th. Open noon to midnight.

“There is no entry on the P&L for ‘covers we never got.’”
New essay on the blog. Alcohol revenue is down across the industry, and most operators are responding by adding three weak mocktails to the bottom of the menu.
There is a different way to read what those menus are doing, and what they are quietly costing.

The weather is getting warmer. Time for Island Echo to shine.
It has been a favorite since we opened. Tropical without being sweet, refreshing without being too acidic. Weight that holds up. Notes of cacao, nutmeg, and orange.
Stop by, grab a bottle, drink it on your own time.

An Italian bar magazine found us. The feature ran this week in Bargiornale, Italy’s trade publication for bar professionals.
Benvenuti al No More Cafè, dove l’alcol non manca a nessuno. Our Italian needed help on that one. Welcome to No More Cafe, where no one misses the alcohol.

Coffee belongs in the same conversation as the cocktails.
When you don’t feel like drinking, sometimes the simplest answer is the right one.
Ours is built with the same care as everything else on the menu. Same room, same standards.
And you can have it until midnight. Every day.

It’s gloomy and wet outside.
We have a reason to leave the house tonight.
Live piano set and live painting, both happening in the room at the same time.
You can sit and listen, watch the work, and talk to the people making it.
The kind of event that only happens in New York, and only once.
Doors open all day
Event starts at 7ish

You can zebra stripe between good and a different kind of good.
You can zebra stripe between bad and a different kind of bad.
What you cannot do is zebra stripe from good to bad and back.
The trend is real. The framing on top of it flattens two completely different stories. One works. The other is a marketing fantasy.
A non-alcoholic drink is not a stand-in for a wine you love.
It is a different thing entirely.

Warm spice. Amber weight. A quiet, complicated room in a glass.
Amber Dream is our third expression.
Caramel base, layered winter aromatics, balanced by hand.
Not sweet. Build for slow sipping.

We use this term a lot when describing No More Cocktails: “Culinary Forward”.
This week we decided to go deeper and explain what it is, and why we take this approach, as opposed to everyone else.

There’s a lot that makes us different from other brands.
It’s not just the fact that we use real ingredients as opposed to mixing and matching extracts and picking a flavor.
It’s not just the fact that we have an actual bar where we test everything and get real feedback from people before we bottle it.
Or the fact that we aim to create drinks that stand on their own, not a lesser version of something else.
Our drinks are not one size fits all. In the beginning, we felt like everything blurred together, and that didn’t work for us.
So we went deeper into what made each one different.
Agave Phantom got smokier.
Island Echo got more tropical.
Amber Dream leaned harder into warmth and spice.
Visions of Ruby got more bitter.
We don’t expect you to love them all. But one of them will be your favorite drink ever.
Take the quiz. Find the bottle that feels like yours.

85 degrees today. We’ve put the coat rack away at least five times this spring. Dragged it to the back, brought it out, dragged it back again. Every time we think it’s over, the city gives us one more 40-degree morning just to keep us honest.
So we’re not making any announcements. We’re just raising a glass while we can.
If this is actually it, we’ll celebrate properly. If it’s not, at least we had today.

Back to business as usual.
This week we adjusted hours a bit to host a few private events, which meant the doors were closed at some unusual times. That’s done. Regular schedule this weekend, noon to midnight, every day.
If you’ve been meaning to stop by and the hours kept throwing you off, tonight’s the night. Saturday, open late. Cocktails, coffee, the full menu.
