Powers started in 1791 in the Liberties, the old working heart of Dublin. An innkeeper named James Power set up a distillery on Thomas Street and never looked back.

By the 1880s it covered six acres of the city. Nearly a thousand people worked there. For close to two centuries, it was as Dublin as Dublin gets.

The distillery closed in the 1970s. The site is now the National College of Art and Design. Three of the original pot stills still stand on campus.

The wh***ey never stopped, though. It just moved to County Cork.

Love and folly are often companions. One rarely shows up without the other trailing behind. Just like vanilla and passionfruit, one taking the edge off the other's sharpness.

In the U.S., shrimp cocktail comes with cocktail sauce. Reddish, sharp, hits you right away. In Ireland, it comes with Marie Rose. Mayonnaise, tomato, Worcestershire, lemon.

We serve ours the Irish way. Atlantic shrimp, Marie Rose, Irish brown bread, and butter. You won't miss the horseradish.

🇮🇹 This year for Gulliver's Travels, our menu went Sicilian. Negronis, shakeratos, amari, and vine-ripened tomatoes. But we couldn't craft a cocktail menu without something quintessentially Swift.

The last cocktail of the series isn't Italian at all. It's our Irish Pub Martini: M**f Irish Gin, Amontillado sherry, dry vermouth, olive, pickled onion, and Dubliner cheddar. A nod to who we are.

Don't worry, this one stays on the menu year-round.

Every night at Swift is a little different. Sometimes it's Irish coffees. Sometimes it's a martini. Sometimes it's both paired with whatever's going on on the board. Usually it's all three.

Gulliver's Travels: Sicily 🇮🇹 A shakerato is Italian to its core, espresso shaken hard with ice until it turns cold and frothy, a summer ritual in cafés from Rome to Palermo since the 1950s. We took that tradition and gave it a boozy riff with Misguided Vodka and Bacardi 8, then brought in limoncello, because no Italian summer runs on coffee alone.

The Sicilian Shakerato is available through the end of August.

Everyone knows and loves a ham and cheese toastie. We just couldn't leave well enough alone. Thick-cut sourdough, Guinness-braised ham, Irish cheddar, and Ballymaloe relish. Pairs perfectly with a pint.
