17 years is a drop in the bucket in Europe, but it’s a helluva long time in the NYC —especially when you recklessly abandon the comfortable confines of Downtown Manhattan to blaze a trail in Long Island City, Queens. It ain’t easy in this town.

Dutch Kills was steadily pumping thunder in the early days, to the point where our future was uncertain. We held fast and strong and have most definitely persevered ever since. Let this anniversary be a testament to our gumption and grit, with an eye on 20 years in 2029. ‘Nuff respect to our loyal neighborhood patrons for holding us down since day one, and of course we have to give a shout-out to our magnificent staff who put in the work that keeps ‘em coming back seven nights a week…

American Trilogy

1 oz. Applejack
1 oz. Rye whiskey
one brown sugar cube
two dashes of orange bitters (1:1 Fee Bros. West Indian Orange Bitters : Regan’s)

Build in a whiskey glass. Saturate the sugar cube with orange bitters and less than a 1/8 oz. of soda water, and gently muddle in order to create a slightly granulated paste at the bottom of the glass. Add Rye and Applejack, and rock ice. Garnish with a long orange twist.

It has been said “Don’t let perfect be the enemy of good.” That saying is not applicable over here at Dutch Kills bartender training. We have a standard that we are unwilling to compromise despite it being time consuming or expensive or whatever you want to call it. And yes we are constantly banging our head over it but in the end we know we can’t accept anything but perfection.

It’s loud, dark, noisy and can be crowed because we’re a bar that actually functions as a bar still. No reservations, FCFS. People laugh dance, celebrate, cry and live real moments. The obsession with one-stop shopping even when going out is just not New York. Being in a bar is not the same as being in a restaurant for those that love it there is no substitute for this realness and energy. As we like to say, trust the original and accept no imitations.
