Salmon Casserole & Leek Gratin

Ingredients (4 servings):

500 g salmon fillet (skin removed, cut into chunks)

3 medium leeks (white & light green parts only), thinly sliced

2 tbsp butter

2 tbsp flour

400 ml milk (warm)

150 ml cream (optional, for extra richness)

100 g grated cheese (Gruyère, Emmental, or cheddar)

1 tsp Dijon mustard (optional)

Salt, pepper & a pinch of nutmeg

Breadcrumbs for topping

Fresh dill, parsley, or chives for garnish

Instructions:

Prepare the leeks:

Sauté sliced leeks in 1 tbsp butter until soft and lightly caramelized (about 8 minutes). Season lightly.

Make the white sauce:

In a saucepan, melt remaining butter, stir in flour, and cook 1 minute.

Gradually whisk in warm milk (and cream, if using) until smooth and thick.

Season with salt, pepper, nutmeg, and stir in Dijon mustard. Add half the cheese.

Assemble the gratin:

In a greased baking dish, spread the sautéed leeks on the bottom.

Arrange salmon chunks on top.

Pour over the sauce, then sprinkle with the rest of the cheese and breadcrumbs.

Bake:

Bake at 180°C (350°F) for 25–30 minutes, until golden, bubbly, and the salmon is just cooked through.

Serve:

Garnish with fresh herbs. Great with a crisp salad or roasted potatoes.

👉 This dish combines the silky sweetness of leeks with the richness of salmon, all bound together in a creamy, cheesy gratin. Elegant but easy — a true comfort classic.

🥩 Steak Frites – A Classic French Bistro Dish 🍟

✨ Who else loves the perfect pairing of juicy steak and crispy golden fries?
Would you dip your fries in steak juices, or keep them crunchy on the side? 🤔
This Steak Frites recipe brings the elegance of a French bistro right to your table — tender, pan-seared steak served with a pile of crispy fries. Simple, classic, and irresistible!

✔️ Ingredients

For the Steak:

2 ribeye or sirloin steaks (about 1 inch thick)

2 tbsp olive oil or butter

2 garlic cloves, smashed

2 sprigs fresh thyme or rosemary

Salt and freshly ground black pepper

Fresh chives (for garnish)

For the Fries:

3–4 large russet potatoes (or use frozen fries for ease)

Vegetable oil, for frying

Salt, to taste

Optional Sauce (Pan Jus):

½ cup beef stock

2 tbsp red wine (optional)

1 tbsp butter

✔️ Instructions

1. Prepare the Fries:

Peel (optional) and cut potatoes into thin matchstick fries.

Soak in cold water for 30 minutes, then pat dry.

Heat oil in a deep pan to 350°F (175°C). Fry potatoes in batches until golden and crisp (about 3–4 minutes per batch).

Drain on paper towels and season with salt.

2. Cook the Steak:

Pat steaks dry and season generously with salt and pepper.

Heat olive oil or butter in a skillet over high heat. Add garlic and herbs.

Sear steak 3–4 minutes per side for medium-rare (adjust for desired doneness).

Baste with butter and herbs while cooking for extra flavor.

Remove and let rest for 5 minutes before slicing.

3. Make the Pan Sauce (Optional):

Deglaze the skillet with beef stock and red wine, scraping up browned bits.

Simmer until slightly reduced, then whisk in butter for a glossy finish.

4. Plate & Serve:

Slice steak and arrange on a plate with fries.

Spoon pan sauce over steak if desired, garnish with fresh chives, and serve immediately.

Do you like your steak rare, medium-rare, or well done? 🥩🔥

These little beauties are a fun way to enjoy the flavors of lasagna with a delightful crispy shell. Imagine tender pasta, savory cheese, and a rich tomato sauce, all wrapped up and fried to golden perfection. They're like little treasures waiting to be discovered!

**What You'll Need:**

8-10 lasagna noodles
* 15 oz ricotta cheese
* 1 egg, lightly beaten
* 1/2 cup shredded mozzarella cheese
* 1/4 cup grated Parmesan cheese
* 1/4 teaspoon salt
* 1/8 teaspoon black pepper
* 1 cup marinara sauce (your favorite kind!)
* 1/2 cup all-purpose flour
* 2 large eggs, for egg wash
* 1 cup breadcrumbs (plain or Italian-seasoned)
* Vegetable oil, for frying (about 2-3 inches in a pot)
**Let's Get Cooking!**

**Cook the Noodles:** Boil your lasagna noodles according to package directions until al dente. Drain them well and lay them flat on parchment paper to prevent sticking.
2. **Make the Filling:** In a medium bowl, mix together the ricotta cheese, 1 beaten egg, mozzarella cheese, Parmesan cheese, salt, and pepper. Stir until everything is nicely combined.
3. **Assemble the Rolls:** Spread about 2 tablespoons of your marinara sauce on one end of each cooked lasagna noodle. Then, spoon about 2-3 tablespoons of the ricotta mixture over the marinara.
4. **Roll 'Em Up:** Starting from the sauce-filled end, carefully roll up each noodle tightly.
5. **Prepare for Frying:** Set up three shallow dishes. In the first, place the flour. In the second, whisk your 2 remaining eggs. In the third, put the breadcrumbs.
6. **Coat the Rolls:** Gently roll each lasagna roll in the flour, shaking off any excess. Then, dip it into the egg wash, letting the excess drip off. Finally, coat it thoroughly with breadcrumbs.
7. **Time to Fry!** Heat your vegetable oil in a deep pot over medium-high heat to about 350°F (175°C). Carefully place a few lasagna rolls into the hot oil (don't overcrowd the pot). Fry for 2-3 minutes per side, until golden brown and crispy.
8. **Drain and Serve:** Remove the fried rolls with a slotted spoon and place them on a plate lined with paper towels to drain any excess oil.
Serve your delicious Crispy Fried Lasagna Rolls warm with extra marinara sauce for dipping. They're a guaranteed crowd-pleaser and taste absolutely divine! Enjoy every bite!

Pineapple Upside Down Cake

Ingredients

For the topping:

½ cup (115g) unsalted butter, melted

1 cup (200g) brown sugar, packed

8–10 pineapple rings (canned or fresh)

Maraschino cherries (one for each pineapple ring)

For the cake:

1 ½ cups (190g) all-purpose flour

1 ½ tsp baking powder

¼ tsp salt

½ cup (115g) unsalted butter, softened

1 cup (200g) granulated sugar

2 large eggs, room temperature

1 tsp vanilla extract

½ cup (120ml) milk

¼ cup (60ml) pineapple juice (from the canned pineapples)

Instructions

Grease a 9-inch square or round pan. Pour the melted butter into the bottom and sprinkle evenly with the brown sugar. Arrange the pineapple slices on top of the sugar-butter mixture, placing a cherry in the center of each ring.

In a medium bowl, whisk together flour, baking powder, and salt.

In a large bowl, cream the softened butter and sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.

Add the dry ingredients to the butter mixture in two additions, alternating with the milk and pineapple juice. Mix until just combined—do not overmix.

Pour the batter evenly over the arranged pineapple and cherries. Smooth the top with a spatula.

Bake at 350°F (175°C) for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

Allow the cake to cool in the pan for 10 minutes. Run a knife around the edges, then carefully invert onto a serving plate. Let cool slightly before serving warm or at room temperature.
