Our private dining rooms stand the test of time. First opened in 1979, longtime Gage & Tollner owners Ed and Trudy Dewey, transformed their Victorian-era living and dining rooms into a warm, elegant space for hosting celebrations, still enjoyed by clients to this day.
In addition to personal and corporate occasions, our two rooms serve as a timeless backdrop for memorable brand activations. Our award-winning kitchen and bar teams are available to collaborate on bespoke menus, as pictured here with the American Single Malt Commission () in 2022.

Our famous butter-roasted hash browns are a true labor of love! Featuring over 100 layers of thinly sliced potatoes and garlic cream, this beauty is slow cooked, before being set and pressed over night, then roasted to slightly crisp, golden brown perfection. Served in a pool of more garlic herb cream and topped with flaky sea salt, try it with 20g of Keluga caviar for an undeniably luxurious side dish!

Introducing our new Chef de Cuisine, TJ Hoy! Born and raised in Union, NJ, trying new foods and helping his family in the kitchen excited TJ from a young age. He taught himself to cook as a teenager by reading cookbooks and watching the Food Network, and regularly made dinner for his siblings before trying his hand professionally at little Italian joints and local country clubs. He started out as a dishwasher at Park Avenue private dining club in Florham Park, NJ before working his way up to Executive Sous Chef, worked the line at the renowned Palace Cafe in New Orleans, and led the kitchen at the late HiHi Room in Brooklyn. He has been part of the Gage & Tollner family since the ill-fated initial opening in March 2020, and was promoted to Chef de Cuisine in April 2024. When he’s not leading his kitchen team (or helping to fix constant maintenance needs) at the restaurant, you can find TJ exploring different parts of Brooklyn and going on outdoor adventures with his beautiful husky mix, Lola.

Our vibrant shrimp scampi is now made with beautiful red shrimp caught right off the coast of Montauk. These shrimp are so fresh and naturally sweet that they can be served raw, so we just quickly broil them to get a nice summery char. Served family style and topped with reduced butter, fine herbs, and crusty bread crumbs, this is one of our favorite dishes to date. Bon appétit!

For this week’s spotlight, we’re featuring the 2018 “Agostado” by Bodegas Cota 45, a hidden gem on our bottle list. This wine hails from the Jerez region of southern Spain, which is known for producing all varieties of sherries popularized during the late 19th century. That said, what we have here is a still white wine that, unlike sherry, is not fortified. Winemaker Ramiro Ibáñez utilizes Palomino (the most common variety of grape used in producing most styles of sherry) as well as the near-extinct Perruno and Uva Rey varieties which were commonly used prior to the commercial success of Palomino-based sherries. The aroma is a bouquet of almond and baked apple with floral undertones, while the palate is rich yet bone dry. This mineral-driven, nutty white wine is exceptional when paired with oysters or really any of our seafood, as well as our new Asparagus Salad with Straciatella.

Intoroducing our new General Manager, Kelson Ayers! Growing up in Lafayette, Colorado just outside of Boulder, local culinary specialties had a heavy influence on Kelson’s love of food from an early age, with weekly steak dinners and pork green chili a staple in his household. But it wasn’t until he moved to NYC at the ripe age of 19 that he would discover a deep appreciation for craft cocktail culture and hospitality, thereby setting him on his future career path. He started bussing tables at Blue Ribbon in Brooklyn and quickly worked his way up to server and bartender, where he had the opportunity to really connect with guests and strengthen his love of hosting. He went on to hold managerial positions at French Louie and Patti Ann’s before joining the team at Gage & Tollner as Service Director in late 2023, and was promoted to General Manager in April 2024. When he’s not leading all front of house operations and engaging with guests at the restaurant, you can find Kelson with his wife and son at Prospect Park, reading fantasy novels, or cheering on his beloved home teams: the Colorado Avalanche and Denver Nuggets.

Our seasonal crudo is all set for spring! Cool off this week with thinly sliced Hiramasa bathed in bright basil aguachile, dotted with fresh radishes and cucumbers, fermented sugared cherry blossoms, Szechuan chili oil and our vibrant housemade ponzu sauce. We get our beautiful yellowtail from who source from Sashimi Royal (nordickingfish), a sustainable aquaculture farm in Denmark who raise their fish from egg to maternity.

We’re now featuring local fluke for our seasonal whole roasted fish! The lovely flaky white fish has a sweet, mild flavor that lends itself to the sweeter, milder side. Brought to us directly off the local fisherman in Montauk by , this sweet, mild, flaky white fish makes a delicious centerpiece for your next dinner, accompanied by a mini cast iron of roasted swiss chard gratin, squeeze of lemon, handful of thyme and a slab of cultured herb butter. Best enjoyed when immediately devoured by a frenzy of clattering forks.
