Quick 2 minute read....
I’ve been feeding people for almost 20 years now, but this one was personal. was the first person who taught me how to cook professionally, knife skills, sauces, and so much more. To this day, I still call him for everything I’m working on (I’m sure he’s fed up with me).
When I got the opportunity to do an Oxtails + Cocktails demo at I was honored, excited, and nervous all at once. It brought me right back to my days at Kingsborough Community College, sitting in class and just hoping I was doing things the right way.
But more than anything, days like this remind me why I do what I do. I’m on a mission to take Trinbagonian food to the masses, to tell our story through flavor, memory, and culture, and to put our cuisine exactly where it belongs on the global stage.
Yesterday was truly amazing. Sharing Trinbagonian food 🇹🇹🇹🇹🇹🇹🇹🇹 with a new audience while brought the cocktails to life made it even more special. To the students who volunteered their time, I deeply appreciate you. Your work ethic and energy give me real hope for the future of this industry.

Telling authentic Caribbean stories through the lens of a self-taught Trinidadian chef is slowly becoming one of my greatest passions.
As Caribbean people, we have some of the most diverse and flavorful food in the world, and I want to play a role in teaching others about our culture through food.

For the first time in YEARS, I’ve been going to bed at 8pm and waking up to the most AMAZING homemade breakfasts.

Finally over my high (literally). I had some AMAZING wines, had some AMAZING food but also cooked some AMAZING food.
I was tasked to create dishes for no more than $1 per guest. My first dish was a play on a Bake + Shark. Shouts to my sponsors and . That Seremoni Grade Black Cod was PERFECT for this ex*****on.
My second dish was "Channa" yea just plain ole Channa. It was a spiced Channa Cup with Pineapple Cilantro Chutney and I topped without some "Spicy Fried Channa"'for heat and texture. Honestly I was in AWE by how many people enjoyed this one.
Thanks to my brother for rocking with me this weekend (PS don't offer him wine or Raw Tuna for the next 3 months 😩😩😩.
