Arak is an anise-flavored spirit deeply woven into the social fabric of the Levant, spanning Lebanon, Syria, Jordan, and beyond, where it’s traditionally shared over long, communal meals as a symbol of hospitality and connection.

Often called “the milk of lions” for the way it turns milky white when mixed with water, it holds a place in Middle Eastern culture similar to wine in Mediterranean Europe, more about the the experience shared sipping, than the drink itself.

Try it for yourself at Kubeh!

Meet your new favorite way to eat your greens. Tender broccolini with smoky, earthy red tahini, made from roasted sesame and often blended with harissa or roasted red peppers. Topped roasted pine nuts add a buttery crunch that ties it all together. Greens that hold their own on the table.

Arak is a traditional anise-flavored spirit deeply embedded in the social and culinary fabric of the Levant, where it has been produced and enjoyed for centuries — often considered the national drink of the region. It is traditionally drunk diluted with water, which causes it to turn a milky, opaque white, and is always served over ice in small glasses.

Experience a taste of Levantine culture at Kubeh by ordering the Arak!

Cauliflower, hummus, and pomegranate have deep roots in Middle Eastern cuisine — from ancient Levantine tables to modern mezze spreads. Our Hummus Cauliflower Salad brings those flavors together with arugula, tomato, cucumber, pistachio, almond, tahini, and yogurt, a vibrant, refreshing take on classic ingredients. 🥗

Happy Mother’s Day from all of us at Kubeh 🌷

Kubeh was built by a mother, and our menu is deeply inspired by generations of family recipes from Israel and Iran — dishes shaped by home kitchens, tradition, and love.

Many of the flavors we share today were also inspired by the incredible women Chef Melanie met from Syria, Kurdistan, and Iraq, whose stories and recipes continue to live through every bowl and every plate.

Today, we celebrate the mothers, grandmothers, and women whose cooking brings people together and keeps culture alive. Thank you for feeding families, preserving traditions, and creating community around the table.
Happy Mother’s Day 💛
