A focaccia di Recco is really a cheese story. Two paper-thin layers of dough, nothing in between but cheese, and no room to hide behind toppings.

That’s why the BelGioioso Cheese matter here: fresh, soft, and creamy enough to hold the whole thing up. Roberto Caporuscio pulls the dough by hand, the forno does the rest in a couple of minutes.
