“Crudo is sashimi, and sashimi is crudo. That’s a huge overlap in the two cultures.” Spain meets Japan with our madai crudo at The Bazaar New York at The Ritz-Carlton New York, NoMad. We lightly cure the madai and serve it with irizake, a sauce made with sake and umeboshi, and then add tomato water, a technique created by Spanish chefs. Garnished with kombu-pickled radishes, compressed jicama, and olive oil because, as José Andrés says, “Why not?”
