Silver Spoon Award time. 🥄✨ This month we’re proud to recognize Natalie Hsu! Hailing from Ventura and a graduate of Culinary Institute of America, Natalie has been baking since she was 10—after years of making birthday cakes for her three siblings, she knew pastry was her path (her first KitchenAid at 12 sealed the deal). Outside the kitchen, she brings the same creativity to crocheting, crafting, reading, and even draws on her background as a dancer. She’s inspired by the passion of our team and the opportunity to work with seasonal ingredients that keep our menu evolving. We’re grateful for her dedication, talent, and leadership—and excited to watch her continue to grow toward her dream of opening her own bakery or stepping into an executive role.

So excited to introduce you to our Silver Spoon winner, Jayden! Originally from Los Angeles, Jayden first started cooking at Union in Pasadena, California. This led him to going to the Culinary Institute of America and earning a degree in applied food science. He stayed in the area and cooked at Panacea Restaurant in Hudson Valley. Funny enough, the chef-owners of that restaurant met while working in the kitchen here at Union Square Cafe, who told Jayden to come join our team. Jayden loves the back of house culture here and the sheer volume we do. He says there is nothing like feeding 400 guests in a dinner service. Without a doubt, his favorite station to work is pasta!

Meet Norberto, our final Silver Spoon Award winner of 2025. 🥄✨
Born and raised in Brooklyn, Norberto knew early on that the kitchen was where he belonged. In high school he earned the legendary nickname “Kitchen Rat” as he would always find his way back to a kitchen during free periods.
We first met Norberto at the 2025 gala, he collaborated with Chef Lena on a delicious bite for the evening. Since then, we knew he would be a great asset to the team.
A baker at heart, Norberto brings passion, care, and serious talent to everything he does. What he loves most about Union Square Cafe is the team that supports one another, pushes each other to be better, and makes even the busiest services feel worthwhile.
Looking ahead, Norberto is dreaming big: opening his own bakery, becoming a chocolatier, and maybe even running a little confectionery shop one day.
We’re lucky to have you, Norberto. Congratulations on a well-deserved Silver Spoon Award!

40 years of Union Square Cafe. What a year it’s been! 2025 reminded us how fortunate we are — for the people who have gathered around these tables for four decades, for the community that continues to show up with generosity, and for the moments that mark time and bring us closer together.
We revisited beloved traditions like Morning Market Meetings, came together to celebrate in Union Square Park, and pulled off a record breaking All In thanks to real partnership and community. Each milestone felt like a reflection of what Union Square Cafe has always been about.
To the entire USC family: thank you for your trust, care, and belief. You are the reason this place continues to endure, evolve, and feel so deeply alive forty years in.
