For this week’s Sunday Table, we have a strawberry matcha latte that’s as delicious as it is pretty. Bonus: it’s made with a healthy dose of gut-loving fiber.
Fiber-Filled Strawberry Matcha Latte
Strawberry Syrup (Batch)
• 1 cup fresh strawberries, hulled and chopped
• 1/3 cup granulated sugar
• Juice of 1 small lemon
Combine strawberries and sugar in a saucepan over medium-low heat. Once the strawberries soften, mash with a potato masher to release the juices. Stir in the lemon juice and simmer until slightly thickened. Cool.
Vanilla Bean Whipped Cream (Batch, Yields ~2 Cups)
• 1 cup heavy whipping cream
• 1 tsp vanilla bean paste (or seeds from 1 vanilla bean)
• 2 tbsp maple syrup
Whip to soft peaks.
Per Serving (12 oz glass)
• 2 tbsp strawberry syrup
• 6 oz milk of choice
• Ice to fill
• 6g matcha
• 1 scoop Sakara Fiber Super Powder
• 75g warm water
• Dollop of vanilla bean whipped cream
Whisk the matcha, Fiber Super Powder, and warm water into a smooth concentrate. Add strawberry syrup to the bottom of the glass, fill with ice, pour in the milk, then top with the matcha concentrate. Finish with a dollop of vanilla bean whipped cream.

For this week’s Sunday Table, we have a tropical vacation…for your gut. Chia seeds and our Fiber Super Powder deliver a satisfying boost of fiber, while coconut yogurt adds creamy, feel-good richness. Finished with fresh pineapple and toasted coconut for the perfect sunny bite. Enjoy.
Piña Colada Chia Pudding
6 oz non-dairy coconut yogurt
1 tbsp agave
1 tsp vanilla extract
3 tbsp chia seeds
Pinch of salt
6 oz coconut milk
1 scoop Sakara Fiber Super Powder
Fresh pineapple, finely diced
Toasted coconut flakes
To a bowl or container, add the coconut yogurt, agave, vanilla, chia seeds, and salt. Stir to fully combine.
In a separate glass, add the Sakara Fiber Super Powder to the coconut milk and mix until fully dissolved.
Slowly pour the fiber coconut milk into the chia mixture, stirring as you go to gently combine.
Cover and refrigerate for at least 2 hours, or overnight.
Serve topped with fresh diced pineapple and toasted coconut flakes.
