Okay, the short story: Cozy won’t be doing 10 dry-aged burgers per day anymore. Starting Sunday, we’ll be selling DABs on Sundays, all day Sunday, every Sunday. Come and get em whenever you want (also the burger itself will be changing)
Longer explanation for those interested: We love being a neighborhood spot, and we love seeing friends all the time, and we love dry-aged beef. For a long time we’ve tried to balance the last thing with the first. We have to somehow throttle how much of the beef we sell, or else we’ll run down our stock (the Meat Hook’s stock), and have long gaps in availability. At the same time, we have never liked the look of the scarcity thing, and never liked telling so many guests “sorry, we’re out” each night.
So with the help of the butcher shop, we’ve decided to stop doing the “ten a day!” thing, and make them available all day Sunday, every Sunday. We think we’ll have enough.
Later this week we’ll post details and a picture as well, but the burger itself is changing. Simpler, classic, and bigger, with more focus on BEEF.
Change is good. Burgers are good. Don’t be sad that it’s over, be happy because it happened.
