The idea of Llama San started taking shape with a dinner series we hosted at chefs counter
We named it Mr. Roboto. We invited some press and friends and the reception was strong enough that we decided to start working on the restaurant
This pic shows two causa nigiris: one with octopus al olivo (olive mayonnaise) and the other with mackerel. Causa is a Peruvian potato and aji amarillo puree (of sorts) and is perhaps one of the most beloved limeño dishes, but that for one reason or another quite doesn't land with the American palate (in our experience). We are currently running one and many Peruvian restaurants in the U.S. most likely have a beautiful version of it
If you are reading this post, do yourself a favor and try a Peruvian restaurant. All the cooking is from the heart

Amazing time. We did what we wanted to do, closed our eyes and ears to all noise, and it worked. Felt good. "There was a sense of possibility"
