When Jumana was a teenager, she befriended Raymond and Ethel Deering — an Irish-American couple who lived across the street. Cap, a retired fire captain, and Ethel spent their days on the stoop, and with their children grown, they welcomed Jumana like family. That’s where Chef Rawia learned to make this classic. And being Rawia, she made it her own — a little deft spicing, a generous pour of Budweiser, and the kind of low-and-slow care that goes into everything that comes out of her kitchen.
