someday i’ll figure out a prettier way to present this, but i’m just tryna get in the habit of sharing numbers right now. here Q1 2026 as compared to Q1 2025. sales didn’t go down as wildly as i would have expected, but costs went up across the board so net income was down way more than gross. someday i’ll lock into r-star and all the numbers will be well. do any of you number nerds see anything interesting in these numbers or have thoughts on how to improve?

Caption if you’d like: (or just write your own that’s fine too)

Join us this Saturday, November 8th from 10am-12pm at for a very important and FREE cupping! All attendees who complete the cupping will get a free drink of their choice made by the wonderful baristas at Principles, paid for by Lucienne.

Details below:
____

Have you ever opened a bag of excellent and/or rare coffee that you’d like to preserve for a longer time at home? What is the best way to keep it tasting good? Freezing? Vacuum bags? Airtight containers? In the original coffee bag? There’s a surprising lack of actual real world testing on this subject, and the majority of the information you’ll find on the Internet is completely anecdotal, or limited in scope at best.

Lucienne wants to change that!

We have started a long term study regarding roasted coffee preservation methods, and this is the first cupping (part of a larger series) where we will be gathering real data, and refining the experiment.

We have preserved a single, iconic coffee (Risaralda Milan Nitro Caturra) from in 20 different ways, and will be cupping them all BLINDLY at the same time to compare. In addition. We will also be brewing pour-overs to compare!

ALL EXPERIENCE LEVELS welcome! In fact, the wider the breadth of experience we have the better.

No RSVPs necessary, and the cupping is completely free. Just show up! Cupping will start promptly at 10:15am.

We’d love to have you!

See you then!

🚨BIG OL’ BIKE RIDE ALERT!🚨
a’ight, so y’all know those long-ass bike rides i’m known to do with some degree of frequency? well and i are hosting both a long long ride (200km) and a short long ride (100km) SAT NOV 1ST at the crack of dawn. then hang out after the ride for a lil party to celebrate the randonneuring new year. 🥳🎉🍾

this type of riding is kinda Serious™, so ya gotta have a .us membership and sign up a few days _before_ the ride. if you don’t already have a membership, ask me how or just poke around the RUSA site, it’s not the most impossible to find. also ask me any questions if you have any slight interest in randonneuring, we always need more riders, especially of the young, q***r, and any-gender-other-than-man variety. :) but lemme say, randos are the sweetest, chillest riders around.

okay i hope to see you all there, it’s gonna be a helluva blast!!

what gets to me with this review is that it’s simultaneously vague, mean-spirited, and has a small kernel of truth to it.

i think that entrepreneurs/small business owners have to have some degree of inability to take feedback or ability to tune out criticism; a key trait (imo) of a successful leader is decisiveness, and the trade-off with that is not making everyone happy. personally, part of my appeal is indeed my strong opinions and bull-headedness, and yes i know that gets me into hot water. but on the same token, i do often ask people in my circle for feedback and i do want to improve. random opinions spouted on review sites, however, carry far less stock for me. lastly, my ability or inability to take criticism is more a discussion for me and my therapist or my closest confidants and not for one-way internet conversation.

to cast aspersions on the success or failure of a business simply because you had a bad reaction hits me as truly mean-spirited. if so many people recommended the place and you had a sour experience, perhaps you just hit an off moment. as the saying goes, those who can’t do critique.

my final thought is really a thing that i need to keep working on and remind myself of. i make hundreds of drinks a day and get asked the same questions dozens of times an hour. i get tired. but i know that for each custie it’s a new and novel experience and i need to try my best to make each and every experience positively remarkable. frankly, i know that i can get short when i’m tired and worn out and that’s a cue to me to take a break. work fewer hours and fewer days. go touch grass. i’m in this for the long haul and i can’t let burnout get me down. we all have our off days, but as a public personality the expectation for me is much greater and my conduct should reflect that. i’m only human and i like to think that new yorkers are known for being kind while not necessarily being cloyingly nice. it’s all a balance. i like being wry, sardonic, and to-the-point, but i could also do well to soften some of my edges and ramp up the customer service. idk, tell me what you think about these musings but say it to me irl.

What people say

Principles GI Coffee House is a unique and inspiring addition to the coffee scene in New York. As a woman-/queer-/veteran-owned specialty coffee cafe, it stands out from the crowd with its mission to provide not only great coffee but also a space for activism, community-building, and grassroots charity events. The cafe's model is based on the dissident, anti-war, pro-peace Vietnam-War-era and Iraq-War-era GI coffee houses that operated as both coffee shops and gathering places for activists.

Katie, the sole owner of Principles, brings a wealth of experience to the table. As a Marine Corps veteran and an active member of the pro-peace movement, she has devoted countless hours to professional development in the realm of coffee brewing and espresso. Her background as the child of a bartender and waitress gives her a lifetime of experience in all things bar, restaurant, and cafe.

What sets Principles apart from other cafes in NYC is Katie's dedication to her craft. Unlike many serial entrepreneurs who come from money but lack experience in running a cafe or restaurant, Katie is scrappy and has a whole village on her side. She has worked as a barista and manager at some of New York’s premiere boutique cafes before opening Principles.

In these uncertain times where businesses are struggling to survive due to the pandemic's impact on our economy, Principles GI Coffee House offers hope for the future. It's refreshing to see new businesses like this one emerge from the ashes of 2020 with fresh ideas and innovative concepts that prioritize community building over profit margins. If you're looking for great coffee served with passion and purpose, look no further than Principles GI Coffee House on 9th Street in New York City.
