Most people think they know lasagna.
Layers of pasta. Sauce. Cheese.
But lasagna is less a recipe than a structure. A way of building flavor. A format that has traveled across regions, centuries, and kitchens, constantly reinventing itself along the way. The next dinner in our series explores just how far it can go.
Different doughs, different fillings, different approaches to layering, texture, and form. Some delicate, some excessive, some that challenge the very idea of what lasagna is supposed to be.

Next in our pasta party series: gnocchi!
Not just the little potato pillows everyone thinks they know. This dinner goes deeper: multiple expressions of gnocchi, from delicate to dense, classic to slightly unhinged.
There will be snacks. There will be rare bottles from Wine Director Drew Brady’s cellar. There will be optional wine pairings and probably at least one course that makes the whole table go silent for a second.

Our next pasta-making class is on Sunday, May 17!
Roll up your sleeves and tap into your inner pasta pro at this hands-on pasta-making class, where you’ll focus entirely on the art of fresh pasta. From mixing and rolling dough to shaping beautiful, handmade forms, this class is all about the fundamentals.
The afternoon begins with a warm welcome of arancini and a glass of bubbles before you roll up your sleeves for a hands-on lesson led by Katie Corkum, Soda Club’s General Manager. You’ll learn the techniques behind three distinct pasta shapes, picking up tips and tricks along the way. You’ll leave with a deeper understanding of pasta-making and the confidence to keep rolling at home.
Once the class ends, we’ll transition into a relaxed, sit-down dinner to enjoy everything you’ve made.

As we move into our second year at 95 Ave A, we want to thank everyone who helped us see and realize the dream of transforming Soda Club from a tiny powerhouse of a natural wine bar on Avenue B to the beautiful restaurant (still with a fantastic wine list and new cocktail program) we are today!
Last night, we celebrated with a full room of guests at the Ravioli Party, and we had exactly the kind of energy we hoped for.
From the whole team: thank you for sharing in our love for this space. Here’s to many more years!
