Layers of pasta. Sauce. Cheese.

But lasagna is less a recipe than a structure. A way of building flavor. A format that has traveled across regions, centuries, and kitchens, constantly reinventing itself along the way. The next dinner in our series explores just how far it can go.

Not just the little potato pillows everyone thinks they know. This dinner goes deeper: multiple expressions of gnocchi, from delicate to dense, classic to slightly unhinged.

Our next pasta-making class is on Sunday, May 17!

Roll up your sleeves and tap into your inner pasta pro at this hands-on pasta-making class, where you’ll focus entirely on the art of fresh pasta. From mixing and rolling dough to shaping beautiful, handmade forms, this class is all about the fundamentals.

The afternoon begins with a warm welcome of arancini and a glass of bubbles before you roll up your sleeves for a hands-on lesson led by Katie Corkum, Soda Club’s General Manager. You’ll learn the techniques behind three distinct pasta shapes, picking up tips and tricks along the way. You’ll leave with a deeper understanding of pasta-making and the confidence to keep rolling at home.

Once the class ends, we’ll transition into a relaxed, sit-down dinner to enjoy everything you’ve made.

As we move into our second year at 95 Ave A, we want to thank everyone who helped us see and realize the dream of transforming Soda Club from a tiny powerhouse of a natural wine bar on Avenue B to the beautiful restaurant (still with a fantastic wine list and new cocktail program) we are today!

Last night, we celebrated with a full room of guests at the Ravioli Party, and we had exactly the kind of energy we hoped for.

From the whole team: thank you for sharing in our love for this space. Here’s to many more years!

Tortellini Night was such a success and honestly, we had too much fun to stop there! We are turning it into a series: “Stuffed: A Pasta Night Series”. Next up: Ravioli Night.

Next week at Soda Club is all about pasta in every form! On Tuesday, March 24, we go all in with a Tortellini Party: four courses of stuffed pasta, snacks, and rare bottles we’ve been saving for no good reason other than this. It’s a lot. It’s meant to be.

On Tuesday, March 24, we are throwing a Tortellini Party: a one-night-only tasting devoted to stuffed pasta in all its glory!

Four tortellini courses plus snacks, each dreamed up with maximum imagination by our kitchen. We’re also diving deep into the cellar and opening bottles we only have one or two of left - rare finds, special pours, and unexpected favorites at very friendly prices, so the glasses keep flowing.

This is not a polite pasta dinner.
It’s a maximalist celebration.

If you’ve been wondering what we did with the old Soda Club space…

Meet  — a new aged wine bar from the same team, now open in our former home on Avenue B.

Long Count takes a deeper look at time and wine. The program, curated by Drew Brady, is built entirely around bottles with ten or more years of age, many available by the glass or half pour. Expect oxidative whites, aged rosés, fully resolved reds, skin-contact wines, and old-vine bottlings — wines that have softened, deepened, and evolved quietly over time, brought together without ceremony or intimidation.

The food follows that same philosophy, centered on warm focaccia and small plates shaped by fermentation, aging, and deeply developed flavors. The room remains intimate and candlelit, with vinyl setting the tone — a familiar address with a new perspective.

It’s a familiar address with a new perspective — one that invites you to explore how wine and food evolve when time is allowed to do its work.

We’re welcoming the new year the Soda Club way - with a cozy, candlelit dining room, a beautiful menu, and plenty of time to linger.
