For two nights only, Chambers is thrilled to host an exclusive preview of Dragonne, the debut concept from our friend, Chef Mark Chou, opening later this year in the West Village.
Mark trained in some of New York’s most celebrated Michelin-starred kitchens, including Blue Hill, Le Bernardin, and Eleven Madison Park. He went on to lead the kitchen at Double Chicken Please, where he developed its distinctive dual-concept food program, and later served as Chef de Cuisine at Frenchette, known for its modern French perspective.
Dragonne will be a contemporary French neo-bistro—rooted in classic technique and shaped by the energy of New York. The menu draws from traditional French foundations, with subtle influences from Asian and American cuisines, resulting in dishes that feel both familiar and unexpected. Seasonal seafood and vegetables take center stage, with a menu that evolves alongside the market.
The restaurant’s design will also reflect this ethos: warm, minimal, and quietly refined, with an open kitchen that brings guests closer to the craft. The experience balances thoughtful, elevated cooking with an approachable, neighborhood feel—offering both a sense of occasion and everyday appeal.
Considering our shared values, Chambers is the perfect spot to host this two-night pop-up, offering an early look at Dragonne ahead of its Fall 2026 opening—an intimate introduction to the vision, flavors, and style that will define the restaurant.
And don't you worry: Chambers’ staples—including our grilled veal sweetbreads and Snowdance chicken with spinach, sherry, and thyme—will still be on the menu, which you can view on the Menus tab of our OpenTable profile.
