One week ago today, we received news that left our entire team humbled, grateful, and deeply energized: Chambers was included on The New York Times’
100 Best Restaurants in New York City for 2026, landing on the list at #29.

To be recognized by The Times amongst so many extraordinary restaurants, chefs, and hospitality professionals across this city is an incredible honor — one that we do not take lightly. New York is the greatest restaurant city in the world, and simply to be included on this list feels profoundly meaningful to us.

What makes this recognition especially moving is that Chambers has always been built around the idea that food, beverage, hospitality and community are inseparable. Every guest who has joined us in Tribeca, every producer who has trusted us with their work, every farmer with their product, and every member of our team who pours their heart into service each night has helped shape what Chambers is today.

Dragonne @ Chambers

For two nights only, Chambers is thrilled to host an exclusive preview of Dragonne, the debut concept from our friend, Chef Mark Chou, opening later this year in the West Village.

Mark trained in some of New York’s most celebrated Michelin-starred kitchens, including Blue Hill, Le Bernardin, and Eleven Madison Park. He went on to lead the kitchen at Double Chicken Please, where he developed its distinctive dual-concept food program, and later served as Chef de Cuisine at Frenchette, known for its modern French perspective.

Dragonne will be a contemporary French neo-bistro—rooted in classic technique and shaped by the energy of New York. The menu draws from traditional French foundations, with subtle influences from Asian and American cuisines, resulting in dishes that feel both familiar and unexpected. Seasonal seafood and vegetables take center stage, with a menu that evolves alongside the market.

The restaurant’s design will also reflect this ethos: warm, minimal, and quietly refined, with an open kitchen that brings guests closer to the craft. The experience balances thoughtful, elevated cooking with an approachable, neighborhood feel—offering both a sense of occasion and everyday appeal.

Considering our shared values, Chambers is the perfect spot to host this two-night pop-up, offering an early look at Dragonne ahead of its Fall 2026 opening—an intimate introduction to the vision, flavors, and style that will define the restaurant.

And don't you worry: Chambers’ staples—including our grilled veal sweetbreads and Snowdance chicken with spinach, sherry, and thyme—will still be on the menu, which you can view on the Menus tab of our OpenTable profile.

If the forecast stays like this, and it's not really going to start snowing until around 7:00pm, with less than half or even a third of the forecasted accumulation by the time we close, then we have every intention of filling these seats on Sunday, February 22nd.

Founded in 2021 by Carolina, Superfly Mob began as a natural wine import and bar in Poland before evolving into a mobile food-and-wine project. Built together with Oleg — a Ukrainian-born chef whose cooking blends Eastern European roots with French, Italian, and Asian influences — the project now moves city to city through pop-ups and collaborations, with Paris as its current base.
